                                  Vegan Sausage Gravy Biscuits

  Comfort food Monday?  Absolutely! I've been dealing with car trouble since Thursday and I'm supposed to be going to Maine this weekend! Even worse is that it has been raining here in Connecticut off and on for the whole week and doesn't plan to stop anytime soon!  So of course I'm going to comfort my stress with FOOD! And there's no better comfort food than sausage gravy and biscuits!       

                                         Here's how I made it:

                                            For the Gravy:

1 package Lightlife Gimme Lean veggie sausage
Vegan butter
olive oil
small onion, diced (I used the whites of a scallion since I used the greens in my biscuits)
1/4 cup all purpose flour
1 1/2 cup vegan milk 
2 TBSP onion powder
1 1/2 TBS Bell's poultry seasonng
salt and black pepper to taste

In a deep frying pan, over medium high heat add a thin layer of olive oil.
once heated, crumble apart the veggie sausage into tiny pieces and brown.
when browned, add in onion, seasonings, and two tablespoons of vegan butter, let cook for about two minuets.
sift in flour and stir well to mix with oil and butter in bottom of pan, once its all mixed in add in milk 1/4 cups at a time, letting thicken before adding more!
taste test and adjust seasonings to desired taste!

You can buy vegan canned biscuits or you can easily make your own!
I used Bisquick and followed the instructions on the side of package subbing skim milk for ripple pea milk and added some scallions, onion powder, garlic powder, and salt! You can get very creative with them!

                        Crispy Chilli Tofu  Have you ever wondered just how the restaurant gets their tofu so amazingly crispy outside and chewy and delicious on the inside? Here's how they do it!!                              Frying Tofu: First things first! You want either a medium or firm block of tofu! This is important for that desired texture. The air pockets in medium and firm blocks are going to create the chewy inside! Extra firm is just too dense and won't achieve the same texture! Press that tofu well! Wrap in paper towels to absorb excess moisture, if you don't have a tofu press, don't fret! A cutting board topped with some cook books or a heavy pan will do! No need for fancy equipment!    After pressed, cut your tofu into desired size. Nuggets, strips, cubes, your choice! Get creative! Now FREEZE!! No really!! Summer Maccaroni Salad Easy, colorful, and delicious!  Here's what you need: 1 lb elbow macaroni, cooked, drained, rinsed, and cooled 1 can chick peas, drained,mashed, skins removed 1/4 cup celery, chopped 1/4 red cabbage chopped 1/4 cup matchstick carrots, chopped 2 TBS red onion, minced 2 TBS chives, sliced 2 dill pickles, minced 2 TBS dill pickle juice 1/2 cup vegan mayo (I used Hellman's vegan) 2 tsp onion powder 2 tsp garlic powder Salt and pepper to taste Combine all ingredients in large bowl, stir well!  Cover and refrigerate for at least an hour to let flavors marry!
